Today, I am here to present you with another adorable recipe for this month's Recipe Redux theme of getting our fruits and veggies in shape!
When I heard the theme included showcasing how we serve our produce in different shapes, I had no idea what I wanted to do but for some reason, all I could think of was watermelon.
I've seen this salad combo so many times but have never tried it at home.
It is a classic combination of watermelon, arugula, blueberries and feta. I mean, just the flavors of those 4 ingredients work so well together.
You have sweet, juiciness of watermelon, with the salty feta, some bitter arugula and a nice bite of blueberry to tie it all together. Not to mention, a delicious balsamic vinaigrette to top it all off!
With this cute heart cut out, of course! Perfect for Love&Grub.
You can really use any cut out you have, hearts, stars or moons. You can even cube it. I think what this salad teaches us about the food experience is that it starts with our eyes.
Sometimes, making our healthy food look intriguing and appetizing is half the battle. Once you taste it, you'll be making this salad over and over!
Let's get cooking!
1/2 of a small watermelon
1/2 cup blueberries
4 cups arugula
1/3 cup crumbled feta
1/4 cup balsamic vinegar
1/2 cup olive oil
1 tbsp horseradish mustard (or plain dijon)
1 tbsp syrup (I used a light pancake syrup)
1/8 tsp garlic powder
Pinch of salt & pepper
1. Combine all ingredients fo vinaigrette in blender and blend until completely combined and oil has emulsified.
2. Slice the watermelon into 1 cm thick slices. Using a cookie cutter, press the shapes into the watermelon and make your shapes.
3. Combine the watermelon shapes with the arugula, blueberry and feta. Drizzle the balsamic vinaigrette (about 1-2 tbsp) over the salad. You can save the remaining dressing in the fridge for up to a week.
There you have it!
It looks cute but it tastes even better! The combination of flavors and textures work so well together. It's a fun way to update a classic and a great salad to bring to all your summer BBQs!
You can substitute arugula with spinach or any green you like. This would also be good with goat cheese in place of feta, but I think that salty bite really brings out the sweetness from the watermelon.
