Today I present you with the cutest thing I've ever made.
With Superbowl Sunday quickly approaching, I knew I had to do something to add to all the different appetizer recipes available out there. I had some ground beef in my fridge and decided to create these little cuties for all of you!
It's one of those things I eat once and a while, when I crave it but don't usually include it in my every day food groups.
I'm sure you remember a few months ago, the World Health Organization' (WHO) released a report that linked consuming red meat (as well as processed meats) with an increase in cancer risk.
It all sounded kind of alarming and scary, but here is a quick gist of what you should really take from that:
Just because you eat red meat does not mean you will get cancer. The studies that the WHO referenced found correlations that led the researchers to the conclusions that there could be a possible increased cancer risk with increased intake of red meat (and processed meats). There are many other factors that can increase a person's risk for these types of cancers, so that should also be taken into consideration.
So does this mean you have to stop eating read meat? No, but maybe try to start reducing your daily intake.
In addition to this, red meat is also high in fat, specifically saturated fat.
We have been saying this for quite some time, but it is absolutely important to try to have some balance.
Instead of focusing so much on totally eliminating one food group, try to consume a wide variety of foods, including lean meats (like poultry), seafood and of course, plenty of fruits and vegetables.
I try to have most of these foods within my normal, while other foods I keep as once in a while foods.
They are also made with a leaner blend, as well as mixed up with mushrooms for some added moisture and nutrients.
I also serve them up with a SUPER simple dip that is my lighter take on Russian/1000 Island dressing.
Let's get cooking!
1 lb lean ground beef (as lean as you can find, over 90% lean)
8oz carton white button mushrooms
4 slices American cheese, cut into quarters
8 cherry tomatoes, sliced in half
4-6 bibb lettuce pieces
2-3 medium sized dill pickles, sliced
1/2 cup nonfat plain Greek yogurt
2 tbsp ketchup
1/4 tsp onion powder
1/8 tsp garlic powder
Pinch salt&pepper, to taste
1. Preheat oven to 350degrees.
2. Place white button mushrooms into food processor and blend until a paste forms. Cook the mushroom paste on the stove on medium heat, until the mushroom color goes from a dark brown to a grey-ish brown color. Place in strainer to allow excess moisture to drain.
3. When mushrooms have cooled, add to ground beef and mix completely. Roll meat mixture into small ball, about the size of a golf ball. Press to flatten.
4. Season each patty with pinch of salt and pepper.
5. Lightly grease baking pan with olive oil or spray oil. Place into oven for 5 minutes. Remove pan from oven and place mini patty's onto pan.
6. Bake for about 15-20minutes until burgers are fully cooked.
7. While burgers cook, assemble the dip ingredients by mixing them all into a bowl.
8. When the burgers have cooked, take them out and top each with a little slice of cheese. You can take one slice of American and cut it into 4 little pieces, one for each burger.
9. Place under the broiler for about 30-45 seconds, watch so they don't burn.
10. Assemble each burger with a piece of lettuce, half slice of cherry tomato and a slice of pickle. Serve with sauce on the side!
Great way to impress your friends this Superbowl Sunday...or whatever party you have next...or just because you like to eat cute, miniature versions of things.
