Ok..I know you're probably thinking, what the heck is farmer cheese?
Well, it is essentially a pressed cottage cheese which has had its excess moisture removed . It has a similar consistency to ricotta with a creamy, slightly tangy flavor.
As a kid, I used to eat it mixed with a little sour cream and sugar. It was one of my favorite treats!
So when The Recipe Redux challenged us to stir up some of our earliest culinary recollections, my mind went back to being probably close to 7 or 8 years old, and mixing this together with my mom in the kitchen.
It's not the most intense cooking lesson, but to be fair, I was barely able to see the kitchen counter.
It was one of my first times taking some ingredients and combining it into something delicious! I am so excited to share my lightened up version using Greek yogurt in place of sour cream and added some berries!
