I think we all know how important presentation is when serving food. If it wasn't for that, no one would care about reading food blogs or sharing food photos. Just looking at food that is pleasing to the eye makes you want to eat it.
So when you try to make healthy and nutritious food exciting for others, making it look appetizing can make all the difference.
The first time I tried it out, I just did tomato and feta but it needed a little extra crunch to offset the soft textures of the avocado and tomato. The cucumber did just the trick!
Plus, an easy vinaigrette made with red wine vinegar and a little dijon bring some acidity and brightness that enhances all the flavors of these fresh ingredients.
It would be perfect served with some chicken breast or baked fish or ever with some chickpeas for a vegetarian meal.
