I have been obsessed with chicken salad lately. I have tried combining different ingredients, veggies, condiments, etc. to try and come up with a great recipe.
I also have been thinking of how I can incorporate some avocado instead of mayo.
It's AMAZING. Using 1/2 of an avocado, some salt & pepper, you can make a pretty delicious chicken salad.
This worked perfectly with this month's Recipe Redux theme,
"Show us how you take a favorite recipe already on your blog – and ReDux the leftovers into a new dish"
So I immediately thought of using my Avocado-Caesar Dressing.
It was perfect!
It is a great way to get some nutrients, healthy fats from the avocado and an even better way to use some left over chicken as well.
So this can incorporate two left over meals!
Chicken can get boring sometimes, especially if it's leftover from the night before.
Adding some healthy flavor to it so that it still feels like you're eating a comforting food is a better enhancement.
